Simmentaler is originally a Swiss breed of cattle from the Bern area (Berner Oberland). The official name is Simmentaler Fleckvieh, which roughly translates as spotted cattle from the Simmen Valley. This is a blond, medium to
large cattle breed, big-boned and with tender muscles. We source our Simmentaler meat in the deep south of Germany. They have grazed all their lives in the luscious meadows of the foothills of the Alps. It provided them with a
perfect intermuscular fat content. This marbling guarantees a juicy steak and makes it the perfect meat for dry aging.
